I plan ahead so that when the wheels come off the bus — and they always do — I can lead my team to a quick recovery. I am clear about my expectations, but I can get the heck out of the way to let others shine. I don’t know everything, but I do know enough to know when to ask questions. I praise in public, and correct in private. Mistakes are my best friend, because they help me grow. I’m a natural problem solver.

Passion is over-rated: I DESIRE. I desire to learn, to cook, to put in the long hours and seek perfection. I work clean. I work efficiently. I work smart. Success is built over time, greatness from humility. I believe there’s no more honourable work than work that nourishes another. I don’t cook from recipes, I cook from technique, practice, and desire. I’m not in it only for the money, I’m in it for the glory.

I’m not interchangeable, I’m a renegade. I’m not some coin-operated flunky. When I’m in the zone, I know my success depends on the success of the team (we’re all in this together!). If you’re hiring for personality, then I’m it. I don’t just like food. I love food. And I want to learn more about it, so I can share my love with the world. I work smarter, not harder, and I’m not afraid to get my hands dirty either.

By the way, I work evenings and weekends.

You wanna talk about the second hardest job in the biz? Let’s talk about the host. I’m the first face you see when you arrive, and the last face you see walking out the door. When everyone else’s head is down, mine is up: I see everything. When you’re in my house, I get to be your surrogate grandparent. No one is more organized, put together, more friendly or more confident than I am. Don’t get me wrong, I’m here to learn. But, if you want a strong “someone” in the long term, then you need me in the meantime.
